BEFORE installing any mod, make sure you startup New Vegas atleast once (get to the main menu). This will allow New Vegas to generate much needed config files for the game.
It really doesn't matter too much what order you install mods, as long as you install patches/updates last. Even then, it's hard to make mistakes, seeing as NMM asks if you want to overwrite or not when installing a mod. I would also advise you to install texture packs last and allow them to overwrite when prompted. Lastly, toggle on Archive Invalidation after installing your textures. This will ensure they show up correctly in-game.
Don't be intimidated by modding. It's super easy. Good luck

The only game I use NMM for is skyrim the fallout games I use FOMM and oblivion I use OBMM (oblivion mod manager). If you decide to use MO there is a learning curve to get things up and running in it.
I've used NMM for awhile and have no issues with it. The newest update is a bit sketch, but otherwise it's fine.
